The instructions in english


For the dough: 

500 g flour
100 g of powdered sugar
25 g of sodium bicarbonate
2-3 teaspoons of gingerbread spice mix
250 g of honey mixed
60g of butter / margarine
1 egg
2-3 tablespoons water
For the writers:

1 egg white
200 g of granulated sugar
2 tablespoons of food starch
1 teaspoon lemon juice / vinegar
food coloring in different colors

For the glaze:

3-4 tablespoons of hot water
1 tablespoon gelatin
red food coloring (gel or powder)

How to make the dough:
Warm the honey and butter and set aside. In a larger bowl measure the flour and icing sugar, mix in the baking soda and spices as well. Break the eggs in the middle of this mixture, pour the warm butter and honey and water, then with a wooden spoon or a pastry blender mix it  well. Put it in a tupperware box or a large bowl, covered in a cool place until the next day. If you do not use all of it, the rest is stored in the refrigerator.

The next day you can remove half of the dough, roll it out on a floured board 3-4 mm thin..
Then you can cut out your shapes.

You bake them in a preheated oven on 180 degree for 7-8 minutes.
Wait at least a few hours before you start putting any glazing or writing on top of them.

The bright red glaze:

Stir the gelatin in the water in a heat resistant glass, let stand a few minutes. Heat water in a small saucepan, put the glass in it and stir to dissolve the gelatin. Now you can stir into this small portions of the food coloring until the right color is achieved. You have to try it on top of a cookie to see the color. If you use liquid food coloring, use only 3 tablespoons of water to dissolve the gelatin.
You have to keep the glass in hot water while using this mixture to color your cookies. 
Use a flat brush for this and allow the cookies to dry completely.

The writers:

Grind granulated sugar in a coffee mill to powder, then pass it through a sieve to make sure there is no big grains left in it. Mix the food starch in it. Whisk the egg white and gradually add the sugar, and the lemon juice as well.
The material turns white, it's volume increases.There will be no need for the entire quantity of sugar, just add enough until you achieve a thick liquid consistency.

I put the foam in this simple kind of thick nylon bag, I made it thinner with a household foil-sealer. I close the top tightly with an elastic band or a knot.
I cut a small hole on the corner,
and that is it! You can write with it nice and thin!

You can put a small amount of liquid food coloring in it if you want, but if you use a liquid paint, you may put a bit more powdered sugar into the mixture so that it is not too liquid.
